Blueberry Pancakes

This is one of my favourite guilt free morning breakfast ideas that the whole family can enjoy!

Ingredients

  • ½ cup uncooked rolled oats (Old fashioned oatmeal)
  • 4 egg whites (1/2 a cup)
  • 1 scoop of vanilla protein powder (or flavour of your choice)
  • 1 tablespoon of organic coconut
  • ¼ of a ripe banana
  • 1 teaspoon cinnamon
  • 1 teaspoon of good vanilla extract
  • ¼ cup frozen blueberries
  • ½ teaspoon baking powder

Method

  1. Combine all ingredients except blueberries in a blender and blend until smooth
  2. Lightly coat a frypan with coconut oil, pure butter or olive oil. Pour mixture into frypan. I would recommend keeping them small. Place a few blueberries on top while they are cooking.
  3. Once the bottom is lightly brown, flip and cook the other side.
  4. When done, remove pancakes and repeat with the rest of the mixture.

Tip

These pancakes will not rise and “bubble” on the top like regular pancakes will, you will need to monitor them closely. I also ensure the pan does not get too hot and regularly take the pan off the heat to avoid burning them.
